In order to obtain Ópera Prima Cabernet, the harvest date is adapted to the optimum ripening stage. Before alcoholic fermentation begins, a cold pre-fermentation maceration is carried out to extract aromatic compounds and colour. Alcoholic fermentation is then extended for 7 days at 26ºC where pumping-over and delestage are carried out to release polyphenols and accentuate the varietal character. The wine is devatted and transferred to stainless steel tanks where malolactic fermentation takes place at a controlled temperature of 20ºC. After gentle clarification and subsequent racking, the wine is stabilised until it is bottled.
