Fauna Ibérica reminds us of the importance of protecting our country's animal species by highlighting four animals characteristic of the Iberian Peninsula: the Iberian lynx, the fighting bull, the wolf, and the Iberian fox.
A species is considered endangered when all its members are at risk of disappearing from the face of the Earth. Therefore, through Pata Negra Fauna Ibérica, we emphasize the importance of protecting the most vulnerable species of our biodiversity.

BULL

Pata Negra Bull
The Tempranillo, or Tinta de Toro, grape found in this area is a grape adapted to Toro's harsh climate and its poor soils, developing thick skins that produce highly structured wines. The bunches are fermented in stainless steel tanks at a controlled temperature and undergo a short maceration to achieve smoothness. The wine then undergoes malolactic fermentation and is transferred to select oak barrels for four months, providing finesse and rounding out the tannins.
Deep cherry red, very opaque, with a purple rim. Splendid and intense nose, clearly varietal, with red and black forest fruits, balsamic notes characteristic of the variety, and elegant spicy tones. Complex. Elegant and intense. The palate reflects what the nose indicated: a complex, long, and very persistent wine. It is very balanced, polished, and has soft, elegant tannins. The aftertaste is persistent and complex.
A wine whose intensity is reminiscent of the strength of the bull.

Pata Negra La Mancha
Tempranillo red wine, Cabernet Sauvignon red wine, Petit Verdot red wine, sulfur dioxide. Dark cherry red color with purple rim. Intense primary aromas of black and red berries that blend perfectly with the toasted and spicy notes acquired from its time in the barrel. Flavorful and balanced with a fruity aftertaste.
Elegant and powerful. A species that must be nurtured and promoted. Our La Mancha wine shares that strong character and that connection to the land where it was born, which characterizes each of its strengths. An animal and a wine whose presence we must protect and enhance.

Pata Negra Rioja
Made from grapes from our vineyards with lower yields of the varieties, and after a carefully selected harvest, this complex and select Crianza is produced. The crushed and destemmed grapes are fermented in stainless steel tanks, followed by a medium-high maceration. The wine rests for a long time in cement tanks, undergoing malolactic fermentation and natural stabilization by gravity.
Very intense cherry red color, clean and bright. Intense and complex aroma, with aromas of red and black fruits, spices, and vanilla notes. Full-bodied, fleshy, and balanced on the palate. Spices and toasted notes linger until the finish.
The majesty and history of the wolf and our Pata Negra Rioja go hand in hand. An animal and a DO recognized and admired in our country for their elegance and for representing values such as strength, character, and attachment to the land where they are born.

Pata Negra Wheel
The entire harvest is carried out at night to ensure the grapes enter the vineyard at a low temperature, thus avoiding oxidation and preserving fresh aromas. The must is obtained through gentle pressing, which favors the extraction of aromatic components present in the solid parts of the fruit. Alcoholic fermentation takes place in stainless steel tanks, maintaining a constant temperature between 13 and 15°C. Alcoholic fermentation will last approximately 15 days.
Bright appearance, with a golden shimmer. It is very aromatic on the nose, with marked aromas of white flowers. It is refreshing and persistent on the palate, with good structure and acidity, followed by an intense floral and fruity aftertaste.
Like the fox, our Pata Negra Rueda is surrounded by an environment that characterizes him and makes him a symbol of naturalness and freshness.
