All the grapes are harvested at night to ensure that the grapes enter the winery at a low temperature, thus avoiding oxidation and preserving the fresh aromas. The grapes are fermented according to origin, divided by plots. The must is obtained by gentle pressing, which favours the extraction of the aromatic components present in the solid parts of the fruit. Fermentation is carried out in stainless steel tanks at a strictly controlled temperature of between 13 and 15ºC. Alcoholic fermentation lasts about 15 days, after which the best tanks are selected for bottling Pata Negra.
