From the year-round monitoring of our Ribera vineyards, we choose those which, due to the terrain or climatic conditions, deserve special attention for the ageing process. The Tinta del País variety is harvested by hand in order to obtain the maximum polyphenolic load. Normally it is during the second half of October when the bunches are still smooth and fresh. Harvesting, transfer and fermentation take place slowly, with care and giving time to transfer the full potential of each berry to the wine, which gradually becomes structured. The contact of the skins is prolonged for more than 30 days, the devatting is by gravity, without pressure, and squeezing every drop that flows, transferring the desired expression. The wood is part of the wine from the end of fermentation, and with the different rackings to which it is subjected, it is enriched with different origins and ages of oak that, with 12 months of ageing, give the desired mouth feel. This ageing is carried out during the year following the year of its production, which means that it will remain in the bottle for another 24 months before being bottled, until it reaches the two natural years for its commercialisation.
