The fruit is harvested with the utmost care, with the grapes arriving at the winery intact. Subsequently, the grapes are destemmed and crushed and after a light skin maceration to extract their aromatic potential, the virgin must is drained and decanted by gravity. It is then fermented in stainless steel tanks, with the temperature controlled at 16-18ºC. Finally, it is racked and stabilised so that it retains all its aromas and freshness until bottling.
