This wine is made exclusively from previously selected Monastrell grapes. The fermentation process is carried out in stainless steel tanks, under strict temperature control. The maceration of the must and skins is prolonged until the end of alcoholic fermentation in order to achieve maximum polyphenolic extraction. During this time, the must is pumped over periodically to encourage extraction. The newly fermented wine is racked and remains at rest until malolactic fermentation is complete.
