All the grapes are harvested at night to ensure that the grapes enter at a low temperature, thus avoiding oxidation and preserving the fresh aromas. The grapes begin to ferment in stainless steel tanks at 16ºC, until the desired residual sugar content is reached and fermentation is stopped, leaving a sweet product as a result.
