Made from Airén grapes, grown in goblet-trained vines in the best plots of the D.O. La Mancha. The grapes are cooled and crushed, leaving them to undergo a 4-5 hour cold maceration process. Subsequently, after pressing, the must is fermented at 15-16ºC. Once the fermentation is finished, the wine is racked and left to settle and refine before bottling.
