For the elaboration of this cava the best white wines of the Trepat and Pinot Noir grape varieties were chosen and after the addition of sugar and selected yeasts the second fermentation was carried out in the bottle (traditional method) in our cellars at a temperature never higher than 15ºC in order to achieve a small and persistent bubble. The bottles remain in our cellars in strict darkness and silence until the date of disgorging.
