El Mayoral es la persona encargada de los viñedos y de la bodega en las grandes fincas, el sabedor de todo lo que ocurre en la propiedad y por ello sabe cuáles son los mejores viñedos, cómo se comportan cada año, cuáles dan los mejores vinos y dónde están estos vinos en la bodega.  El Mayoral Reservado es el tesoro escondido de nuestra bodega de Jumilla, aquel vino que el jefe de la bodega ha elegido por ser el mejor, su preferido, el que ofrecerá con orgullo.

Grape type: Syrah, Cabernet Sauvignon and Petit Verdot, a perfect combination of adaptation and aromas.
Bodegas 1890 is named after the year García Carrión was founded. Its wines are fruit of the labor of five generations who over the years have passed down the most beneficial cultural practices and in turn adapted the best grape varieties to the lands of Jumilla (Murcia), a region blessed by its contrasts of mountains and valleys. The predominant varietal is Monastrell, a noble varietal extremely well adapted to low rainfall, of exceptional quality, with high concentration of tannins and polyphenols. Along with this traditional varietal, the winery has cultivated others of high prestige, such as Tempranillo, Cabernet Sauvignon, Syrah, Merlot and Petit Verdot. Careful production at the winery keeps this natural quality intact and improves on it during the fermentation processes. The wine is aged in American and French oak barrels. The reserve wines will remain at least three years the aging warehouses, between oak barrels and bottles.
This wine is made exclusively from previously selected Syrah, Cabernet Sauvignon and Petit Verdot grapes.
The fermentation process is carried out in stainless steel tanks under strict temperature control. The maceration of the must and the skins lasts until the end of alcoholic fermentation in order to achieve maximum polyphenol extraction. During this time, the must is pumped periodically to facilitate extraction. The newly fermented wine is decanted and remains at rest until completing malolactic fermentation. After processing this wine is kept for six months in stainless steel tanks and later in American oak barrels for another 6 months.
Appearance: Very deep black cherry color.
Smell: Intense and complex aromas of black and stone fruits, with appealing coffee hints.
Taste: It is bold, very tasty, luscious, with round sweet tannins and a long lasting finish.
Pairing: great with barbecues, all red meat, as well as on its own. Try it with a piece of black chocolate…
Best served at 16-18ºC.
